I have offsite refridgerated storage. I calculated that it costs me $3-$4 AUD per bottle per annum. I think I should get out and let wineries age them at $US1 p.a. plus say $1-$2 profit

I think wineries have physical and cash flow constraints also.

How much land do they have to store and can they afford to not generate sales each year?

Indeed. Yes, certainly wine has its unique features but like all other commodities do.
